Vinification:
Fermented in steel tanks under strict temperature control (28°C),
racked after 6 to 8 days, decanted, gotten malolactic treatment and
completed always at a controlled temperature. Decanted in wood for one year of aging and maturation, re-come into the steel tanks, bottled in spring and made ready for drinking at the beginning of summer. Annual production is 20,000 bottles. |
Vinification:
Fermented in steel tanks at a controlled temperature (30°C), racked after 8/10 days, decantations and malolactic completed with temperature maintenance. It matures for 12 months in barriques and big barrels, then in bottles for some months to complete the refinement. Annual production is 21,000 bottles. |

Annual production is 12,000 bottles. |

Vinification:
After pressing and subsequent decanting in cold steel tanks (9c), fermentation and malolactic processes are completed. Thereafter held in barriques of first and second passage, 'batonage'. Bottled in July, refinement in bottle for 6 months, before being released at the end of the year. Annual production is 2,800 bottles. |
Vinification: Fermented in steel tanks at a controlled fermentation temperature (30°C-32°C), racked after 10/12 days, followed by decanting in casks.
Malolactic treatment at a constant temperature and thereafter matured in casks of first, second and third passage for 18 months. The grapes are vinified separately and are assembled before bottling. Refined in bottle for 6 months, before being released at the beginning of the third year. Annual production is 4,500 bottles. |

Vinification: Soft pressing of the whole grape, in a membrane press, immediate fining and refrigeration (approximately 0°C), followed by filtering and holding in a refrigerating cell (0°C). After slow fermentation in an autoclave, it acquires a slight froth, before decanting in sterile bottles, ready two months after the harvest.
Annual production is 15,000 bottles. |
