Vinification: The grapes for the Chianti Classico are selected and picked by hand. The must undergoes maceration over the grape skins for 12-14 days. Following the alcoholic and malolactic fermentation, the wine is then aged in Slavonian or French oak barrels for a period of 6 to 10 months and refined further in the bottle. |
Vinification: The fully ripened grapes are fermented over their grape skins for at least 12 days. Vinification: Grapes are cultivated exclusively in the vineyards of the Fizzano estate. After fermentation most of the wine matures in 35hl French oak barrels, while a small proportion is aged in 225-liter barriques. After the blending the wine rest in the bottle for another year. |
Vinification: The grapes for this wine are selected by hand within the best vineyard of the Le Macie estate in Castellina in Chianti. Aged in French barriques for 18 months. The wine refines for another year in the bottle before being released. |

Vinification: The grapes are painstakingly selected by hand before being vinifed separately
and then left to mature in French oak barriques for between 9 - 13
months. The two varieties are kept separated throught the all process and
once blended, the wine is aged for a further three months in 35hl barrels,
followed by another year in the bottle. |
Vinification: The grapes involved in the Moonlite blend come from Tuscany selected vineyards. The wine is produced following the most advanced fermentation techniques for white wines. |

Vinification:
The well-ripened grapes are partially dried out and the must is transferred to typical 200 liter casks for at least three years. In this way, Vin Santo naturally acquires its alcohol and sugar contents as its unique organoleptic qualities ome into their own. |
